Tres Leches Cake Recipe
Ingredients:
For the Cake:
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 5 large eggs, separated
- 1 cup sugar, divided
- 1/3 cup whole milk
- 1 tsp vanilla extract
For the Milk Mixture:
- 1 cup evaporated milk
- 1 cup sweetened condensed milk
- 1/2 cup heavy cream
For the Topping:
- 1 cup heavy cream
- 3 tbsp sugar
- Fresh fruit (such as strawberries or cherries), for garnish
Instructions:
Prepare the Cake: Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan. In a bowl, combine flour, baking powder, and salt.
Make the Batter: In a large bowl, beat egg yolks with 3/4 cup sugar until pale and fluffy. Add milk and vanilla, then gently fold in the flour mixture. In a separate bowl, beat egg whites with remaining 1/4 cup sugar until stiff peaks form. Gently fold egg whites into the batter.
Bake: Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let the cake cool.
Add the Milk Mixture: In a bowl, whisk together evaporated milk, condensed milk, and heavy cream. Poke holes all over the cake with a fork, then pour the milk mixture over the cake, allowing it to soak in.
Prepare the Topping: In a bowl, whip heavy cream with sugar until soft peaks form. Spread over the soaked cake.
Serve: Garnish with fresh fruit if desired and serve chilled.
