Ingredients:
- 6 large egg yolks
- 3/4 cup granulated sugar
- 1 cup mascarpone cheese, room temperature
- 1 1/2 cups heavy cream
- 1 1/2 cups strong brewed coffee, cooled
- 1/4 cup coffee liqueur (optional)
- 2 packs (7 oz) ladyfinger cookies
- Unsweetened cocoa powder, for dusting
Instructions:
Prepare the Mascarpone Filling: In a mixing bowl, whisk egg yolks and sugar together over a double boiler until the mixture thickens. Remove from heat and let cool slightly, then fold in the mascarpone until smooth and well blended.
Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until smooth and creamy.
Combine Coffee and Liqueur: In a shallow dish, mix the brewed coffee with coffee liqueur (if using).
Assemble the Layers: Dip each ladyfinger quickly in the coffee mixture and layer them in a 9×13 inch dish. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of coffee-soaked ladyfingers and the remaining mascarpone mixture.
Chill and Serve: Cover and refrigerate for at least 4 hours, or overnight for best flavor. Before serving, dust the top with unsweetened cocoa powder.
