  • 1/2 cup basmati rice, rinsed and soaked for 30 minutes
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 tsp cardamom powder
  • A pinch of saffron threads (optional)
  • 2 tbsp chopped almonds and pistachios (for garnish)
  • 1 tbsp raisins (optional)

Instructions:

 

  1. Cook the Rice: In a large, heavy-bottomed pot, bring the milk to a gentle boil over medium heat. Add the soaked and drained rice, stirring occasionally to prevent sticking.

  2. Simmer Until Thickened: Reduce heat to low and cook for 30-40 minutes, stirring frequently, until the rice is soft and the milk has thickened. The consistency should be creamy and pudding-like.

  3. Add Flavorings: Stir in the sugar, cardamom powder, and saffron threads. Continue cooking for another 5-10 minutes until the sugar is fully dissolved and the kheer is fragrant.

  4. Add Garnishes: Mix in the chopped nuts and raisins, reserving some for garnish if desired.

  5. Serve: Remove from heat and let cool slightly. Serve warm or refrigerate and serve chilled, garnished with additional nuts and a few saffron threads if desired.
