Dorayaki Recipe
Ingredients:
For the Pancakes:
- 2 large eggs
- 1/4 cup sugar
- 1 tbsp honey
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 2-3 tbsp water
For the Filling:
- 1/2 cup sweet red bean paste (anko)
Instructions:
Prepare the Batter: In a mixing bowl, beat the eggs, sugar, and honey until smooth. Sift in the flour and baking powder, mixing until just combined. Add water, 1 tbsp at a time, until the batter is smooth and pourable.
Cook the Pancakes: Heat a non-stick skillet over medium heat and lightly oil it. Pour about 2 tbsp of batter onto the skillet to form small, round pancakes. Cook for 1-2 minutes until bubbles form, then flip and cook for another 30 seconds. Remove from heat and repeat with remaining batter.
Assemble the Dorayaki: Spread a spoonful of red bean paste on one pancake and top with another to form a sandwich.
Serve: Enjoy fresh or store in an airtight container. Optionally, wrap individually for easy snacking.
