Ingredients:

Instructions:
Prepare the Crust: In a bowl, mix flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, 1 tbsp at a time, until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
Make the Custard: In a bowl, dissolve the sugar in hot water and let cool. Whisk in evaporated milk, eggs, and vanilla extract until smooth. Strain the mixture to remove any bubbles or clumps for a smooth custard.
Assemble the Tarts: Preheat oven to 350°F (175°C). Roll out the dough and cut into circles that fit a muffin tin or tart molds. Gently press each circle into the molds to form the tart shells.
Fill and Bake: Pour the custard filling into each shell, filling about 80% full. Bake for 20-25 minutes, or until the custard is set but still slightly jiggly in the center.
