Ingredients:

For the Crust:

  • 2 ½ cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 1 tsp salt
  • 1 tbsp sugar
  • 6-8 tbsp ice water

  • 6-8 large apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp allspice
  • 1 tbsp lemon juice
  • 2 tbsp all-purpose flour

Instructions:

  1. Prepare the Crust: In a large bowl, combine flour, salt, and sugar. Add cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, 1 tbsp at a time, until the dough holds together. Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.

  2. Make the Filling: In a large mixing bowl, combine sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, allspice, lemon juice, and flour. Toss until apples are evenly coated.

  3. Assemble the Pie: Preheat oven to 400°F (200°C). Roll out one disk of dough to fit a 9-inch pie pan, leaving some overhang. Pour apple filling into the crust. Roll out the second dough disk and place over the apples. Trim and crimp the edges to seal, and cut a few slits on top for steam to escape.

  4. Bake: Brush the top crust with egg wash and sprinkle with a little sugar. Bake for 45-50 minutes or until the crust is golden and the filling is bubbling.

  5. Serve: Allow to cool slightly before serving. Serve warm, ideally with a scoop of vanilla ice cream.
