Madeleines Recipe

Ingredients:

  • ½ cup unsalted butter, melted and cooled
  • ¾ cup all-purpose flour
  • ½ tsp baking powder
  • 2 large eggs
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • A pinch of salt

Instructions:

  1. Prepare the Batter: In a mixing bowl, whisk the eggs and sugar until pale and slightly thickened, about 3-5 minutes. Add vanilla extract and lemon zest, mixing until incorporated.

  2. Combine Dry Ingredients: In a separate bowl, sift together flour, baking powder, and salt. Gently fold the flour mixture into the egg mixture until just combined.

  3. Add Butter: Gradually fold the melted butter into the batter, mixing gently until smooth. Cover and refrigerate for at least 1 hour to allow the batter to rest.

  4. Preheat and Grease the Molds: Preheat oven to 375°F (190°C). Lightly grease a madeleine pan with butter and a dusting of flour.

  5. Fill and Bake: Spoon a tablespoon of batter into each shell mold. Bake for 10-12 minutes, or until the madeleines are golden around the edges and spring back when touched.

  6. Cool and Serve: Allow madeleines to cool in the pan for a few minutes before transferring to a wire rack. Dust with powdered sugar if desired, and serve.
