Ingredients:

 

  • 2 lbs beef chuck roast, cut into chunks
  • 4 guajillo chiles, stemmed and seeded
  • 2 ancho chiles, stemmed and seeded
  • 1 small cinnamon stick
  • 2 bay leaves
  • 1 onion, quartered
  • 3 cloves garlic
  • 1 tsp dried oregano
  • 1 tsp cumin
  • Salt and pepper to taste
  • Corn tortillas, for serving
  • Fresh toppings: diced onions, cilantro, lime wedges

Instructions:

 

  1. Prepare the Broth: Boil guajillo and ancho chiles until softened. Blend with garlic, onion, and spices to create a smooth sauce. Set aside.

  2. Cook the Beef: In a large pot, combine beef, bay leaves, cinnamon stick, and chili sauce. Add water to cover and simmer for 2-3 hours until the meat is tender.

  3. Assemble Tacos: Dip tortillas into the consommé, then add shredded beef and fry until crispy.
